Fruit Cocktail Cake

Okay, I really did not mean to go an entire month without posting. It's been crazy around here. I'm trying to decide if the crazy is just going to be our norm or if we need to change some things to get less crazy. Jury is still out. I am starting to look for other blogging/website options that will make it possible to index all the recipes. I'll let you know when that happens. I'm not very computer savvy and I'm not willing to pay for anything either so that doesn't help.

Ron's parents just spent the past month with us. I know, some of you are gasping in horror when you imagine your own in-laws staying with you for that long. It really isn't bad at all. We could not survive the week prior to TCTC without them and since they are willing to stay longer, we get to enjoy being with them afterwards. Since they live 15 hours away we only see them about twice a year. Ron's mom always teaches me a new recipe. This time she made Dad's favorite cake, Fruit Cocktail Cake. I'd never heard of it, but it is one of those recipes "Grandma used to make" and it is so yummy! It is very easy and a good one for when you need something in a hurry. It is also great for a nice breakfast or brunch. Ron, who is not fond of cake, loves it because it is very moist.

Fruit Cocktail Cake

2 eggs
1 1/2 cup sugar

Mix together until lemon color. Add:

2 cups flour
1 15 oz can fruit cocktail in lite syrup, DO NOT DRAIN
1 tsp. soda
1/2 tsp. salt

Mix well and pour into greased 9 x 13 pan. Sprinkle on top:

1/2 cup brown sugar
1/2 cup chopped nuts (optional)

Bake at 350 degrees for 35 minutes or until cake pulls away from sides of pan. Cake will be a deep golden brown color.

While cake is baking, prepare this frosting. (It needs to cool a bit before you pour it over the hot cake.)

1 cup sugar
1/2 cup margarine
1/2 cup cream or evaporated milk
1 tsp. vanilla
1 cup coconut (very optional)

Melt margarine in small sauce pan. Add sugar and milk. Heat to boiling over medium high heat. Boil 2 1/2 minutes, stirring constantly. Remove from heat and allow to cool until the cake is done. Add coconut before pouring frosting over cake.

I hate coconut so I think it is perfect without it, but if you like that kind of thing it's up to you. My mother-in-law says it's better with it, but she loves me enough to leave it out. Thanks, Mom!
